Hello! I’m Pavelka team member Nick. Previously, I lived in China for over 10 years so I was lucky enough to try lots of different Chinese food and flavours. (including this roast chicken)

There are many different types of Chinese dumpling and this is just one type.

Ingredients:

  • 600g raw prawns – chop finely
  • 200g pork mince
  • Light soy sauce
  • Chinese five spice
  • Chinese cooking wine (rice wine)
  • Spring onions
  • Ginger
  • Dumpling casings (round ones, you will need around 50+ for this amount of filling mix, or just freeze the mix and make them later)

Recipe:

Mix the ingredients very well in a large bowl. The amount shown will make many dumplings, but you can freeze them and save some for later if you don’t eat them all.
Follow the video instructions for making them. It is a little difficult, but don’t worry! It takes a lot of time and practice to become proficient – but that’s the fun of making them! If you can’t do it first time then don’t despair, it takes practice and you will become better each time.
Fry as shown in the video. The exact timing will depend on your frying pan and cooker heat, but the idea is to put the dumplings in a cold pan, with oil, and heat on a medium-high heat for 5-10 minutes until it sizzles. When you hear a sizzle, add the water – add a little first rather than a lot, such as half a cup. It takes a little trial and experience. Put the lid on and fry for around 10-15 minutes, until dark brown on the bottom.

Then you can take the lid off and fry until just before the bottom burns.

I love dumplings with Chinese vinegar – there are many types but I prefer Zhejiang vinegar, sometimes called Chinkiang vinegar on certain brands of vinegar. You might also want chilli-paste on the side.

Drink it with a hot Chinese green tea for the ultimate experience!

As mentioned, this is a recipe that takes time to master. It’s more about having fun and connecting with people as you try it.

Getting more experience with the dumpling making and the frying will mean that eventually, you will get it just right. So keep trying!
